Cherry glaze + black sesame donuts

    Wake the yeast.

    Stir warm milk, yeast, and 1 teaspoon sugar in a large bowl. Leave for 5 minutes, until a soft foam appears.

    Build a supple dough.

    Add egg, butter, remaining sugar, flour, and 1 teaspoon salt. Knead for 7 minutes, until smooth and springy. Cover and let rise in a warm place for 60 minutes.

    Cut and proof.

    Roll dough to 1.5 cm thick. Cut ten 8 cm rounds, then cut the centers with a 3 cm cutter. Rest on parchment for 25 minutes.

    Fry and glaze.

    Heat neutral oil to 175°C. Fry donuts in batches for 90 seconds per side. Whisk preserves, icing sugar, and 1 tablespoon water. Dip cool donuts, then scatter with sesame.

Why this works

Fruit brings the sharp edge.

A tart preserve keeps the sweet glaze from flattening the toasted sesame. Add the glaze only after the donuts cool enough to hold their shape.
