The spring oolong from Nantou is coming through especially well in the small-batch roaster: toasted almond, pear skin, and a light honey finish. I would keep the brew temperature a touch lower than your current card says, closer to 88 C, to avoid pushing the tannins. We also have 6 kg left of the smoked black tea from the June batch. It is softer than last year's version, more cedar than campfire, and it has been selling steadily at the Saturday market. If you want the usual Monday delivery, please send quantities by 2 p.m. today. I can still roast a supplemental batch Sunday morning if you need more of the breakfast blend, but after that we are locked in for packaging.
